Angel León’s Spanish restaurant is ‘reinventing the sea’

They call Angel León the “Chef of the Sea.” It’s almost not even hyperbole. León runs a two Michelin starred restaurant called Aponiente in Andalusia, Spain. Along with his staff of 50, he has reinvented the genre of seafood. When León picks up a fish, he knows not only what species he’s looking at but also where it came from and how it lived. He’s devoted his life to discovering new ingredients and finding new applications for old ones. “The sea is a never-ending source of inspiration.”
